  • 2 cans Pillsbury™ refrigerated classic pizza crust
  • 1 1/2 cups Muir Glen™ organic pizza sauce (from 15-oz can)
  • 3 cups shredded mozzarella cheese (12 oz)
  • 1 cup sliced pepperoni
  • 1 tablespoon butter, if desired

Preheat oven to 400 degrees F.

Measure diameter of tall-sided ovenproof pan. (Pan used was 6-inch in diameter with 4-inch high side.) Unroll 1 can of dough onto work surface; press out into thin layer. Cut out 3 (6-inch) rounds; place on cookie sheet. Bake 8 minutes. Remove from cookie sheet to cooling rack; cool.

Shared Food

Unroll remaining can of dough; cut 2 additional (6-inch) rounds from long edge of dough, leaving opposite side untouched. Place rounds on cooled cookie sheet. Bake 8 minutes. Remove from cookie sheet; cool.

Shared Food

Meanwhile, line pan with cooking parchment paper so that ends of paper stick up and out of pan. Cut long strip of dough at least 1/2 inch wider than height of pan.

Shared Food

Carefully drape long strip of dough around inside edge of pan to line, leaving 1/2 inch hanging over outside edge of pan and bottom of pan open. Pinch seam to seal.

Shared Food

Carefully place 1 partially baked crust round in bottom of pan.

Shared Food

Spread pizza sauce over crust; top with pepperoni slices and sprinkle with mozzarella cheese (when cheese melts, crust above will stick to it).

Shared Food

Shared Food

Shared Food

Repeat to make 3 more layers.

Shared Food

Shared Food

For top layer, place last crust over cheese; sprinkle with remaining cheese and arrange remaining pepperoni on top.

Shared Food

Fold overhanging dough over top layer of pizza cake to make a raised crust edge.

Shared Food

Bake 20 to 25 minutes or until dough around pizza cake is fully cooked. (To test, carefully pull up parchment paper to raise pizza cake out of pan.) Once completely baked, cool in pan 5 minutes. Remove pizza cake from pan; brush crust with butter. Use sharp knife to cut slices like you would a cake.

Weeknight Enchiladas Are So Easy to Get in the Oven

Print Recipe

Weeknight Enchiladas are the perfect vegetarian meal – and trust me, you won’t even notice the absence of meat in this. With toasted corn tortillas stuffed with cheese and refried beans, these enchiladas are restaurant quality and so easy to get in the oven.

With an assembly time of less than 30 minutes, your tummy will be satisfied in no time. This recipe makes plenty, so you’ll have more than enough for the whole family, or some leftovers to get you through your lunch break the rest of the week. Don’t forget to top these with sour cream, avocado, or any other fresh ingredients that you like!

Shared Food

For the sauce

  • 2 tablespoons vegetable or canola oil
  • 2 tablespoons chili powder
  • 2 tablespoons flour
  • 2 cups water
  • 3 ounces tomato paste
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ¾ teaspoon salt

For the enchiladas

  • 16 small corn tortillas
  • 2 cups refried beans
  • 2 cups Monterey Jack cheese, shredded
  • ½ large avocado, sliced thin
  • ¼ bunch cilantro (or green onions), roughly chopped

Shared Food

To make the sauce, in a small sauce pot, combine the chili powder, flour, and oil. Cook over medium heat while stirring, for one to two minutes to toast the spices and flour. Whisk in the water, tomato paste, cumin, garlic powder, and cayenne pepper. Allow the mixture to come to a simmer, at which point it will thicken. Once thick enough to coat a spoon, taste and add salt as needed (½ to ¾ tsp). Set the sauce aside.

Shared Food

Shared Food

Toast the tortillas in a dry skillet over medium flame until they are just flecked with brown on each side. The tortillas should be slightly more firm, but still pliable enough to roll. Stack the tortillas on a clean plate as they come out of the skillet.

Prepare a casserole dish by coating with non-stick spray, then spread a layer of enchilada sauce over the bottom (½ to 1 cup). Preheat the oven to 350 degrees.

Shared Food

Shared Food

Add about ¼ cup of refried beans to each tortilla, plus a small pinch of shredded cheese. Roll the tortilla tightly around the beans and cheese, then place seam side down in the casserole dish. Continue until all of the tortillas are filled. Pour another ½ to 1 cup enchilada sauce over the rolled enchiladas in the dish, leaving some of the edges exposed so they can become brown and crispy. Top with the remaining shredded cheese.

Shared Food

Bake the casserole in the oven for 25-30 minutes or until the sauce is thick and bubbly around the edges and the center is heated through. Top with thin slices of avocado and chopped cilantro leaves (or sliced green onions).

Shared Food

So good! I make these every week and I’ve not gotten bored of them.

Bacon Wrapped Pineapple Mozzarella Rings Are Glazed and Stuffed with a Flavor Combo You’ll Love

Print Recipe

Look no further for the ultimate appetizer – Bacon Wrapped Pineapple Mozzarella Rings are over the top, glazed and filled with a crazy flavor combination that will have your guests saying “Wow!”

You’ve gotta try these out for an onion ring you’ve never even thought of before! This mega ring is onion stuffed with mozzarella and a pineapple ring, all wrapped in bacon, and don’t forget to glaze these with yummy BBQ sauce for caramelization you’ve never had before. These can be made on the grill or in the oven so you can make up a batch all year round!

Shared Food

Ingredients:

  • 16-24 slices of bacon (thinly sliced is easiest to work with)
  • 1 can of sliced pineapple rings (you need 8 rings)
  • 8 mozzarella string cheese sticks
  • 2-3 large sweet yellow onion, cut into ⅓ inch rings
  • ½ cup BBQ sauce of your choice

Directions:

Peel and cut the large onion into ⅓ inch slices.

Open the can of pineapple slices, drain the juice and set aside 8 slices.

Shared Food

Match the onion rings to the size of the pineapple slices—choose rings that have more of a bowl shape to help hold the string cheese in place.

Cut the mozzarella string cheese in half.

Place one half of the mozzarella in the onion ring and cut the other half to fill in the remaining gap. Place the cut piece filling in the gap.

Shared Food

Shared Food

Stack the mozzarella lined onion ring on the pineapple and start wrapping with bacon slices. Use two to three slices of bacon per ring. Just take it slow and keep it all in place and it will eventually wrap — sometimes it takes some re-positioning or re-stuffing of string cheese into ring.

Shared Food

Shared Food

Start up your grill and cook on medium 30 minutes or until bacon is fully cooked. Glaze rings throughout cooking.

Let cool down for a few minutes before serving. Serve as is or with a dipping sauce if desired.

Spice Up Your Dinner With Crispy Honey Sriracha Chicken Drumsticks

Print Recipe

Tired of the same-old dinner? Try something a little different by using a new sauce mixture to liven up that chicken dinner! Sriracha sauce is extremely popular, but if you take that spicy condiment and mix it with some sweet honey you end up with a perfect flavor that you are going to love.

We made it using drumsticks but if you wanted to you could put it on chicken thighs, breasts or wings just adjust the cooking time accordingly. Just make sure you use skin-on chicken because you are going to want it to be crispy.

Shared Food

  • 5 chicken drumsticks
  • Pinch of salt and pepper
  • 2 tbsp cornstarch
  • 1/4 cup Sriracha
  • 2 tbsp butter
  • 2 tbsp honey

Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with tin foil and top wire cooling racks so your chicken can cook more evenly and not get stuck to the sheet. Use baking spray on your wire racks to help the cleaning process.

In a large bowl sprinkle a pinch of salt and pepper onto your chicken drumsticks.

Bake for 40 minutes or until it is golden brown on top. If you find the top is browning too quickly before the bread is cooked through, cover with foil for the rest of the cooking time.

Let cool for a good 15 minutes in the pan and another 5 after you place it on a cooling rack so that it will slice easily and cleanly.

While it cools, stir the sugar into your strawberries.

Oreo Balls Are the Perfect Mini Dessert for a Party

Print Recipe

Oreo Balls are the easiest dessert that looks like you spent a long time on something decadent and fancy. Well, this recipe is decadent, and it does look fancy, but you won’t spend tons of time putting these together, and they’re the perfect mini dessert for a party.

Serve these in cupcake liners for some visual interest, and feel free to decorate these little chocolatey truffles however you like – drizzled chocolate gives a nice contrast, but if you work quickly sprinkles or cookie crumble would work great on top, too. You won’t be able to get enough of the cookie cheesecake taste that’s covered in chocolate!
