1. Preheat oven to 350 degrees.

2. Pour 1/4 cup of shredded coconut on a baking sheet and place in the oven for 5-8 minutes or until coconut is toasted to a golden brown. Set aside to cool.

3. Make your vanilla cake mix according to box instructions and then allow it to cool completely before cutting it into 1 inch cubes.

Oh ya, that’s right! The copycat recipe for the McDonalds chicken nuggets that we all know and love is right here!

I’ve always been a little skeptical about copycat recipes, because the truth is, they’ve never really been a copycat in my opinion. So when I came across this recipe, I think my main motive for trying it was simply because this wasn’t just any copycat recipe, this was a McDonalds copycat recipe…and with that being said I gave it a try.

Spicy Cheesy Bacon Bites

1. Preheat oven to 350 degrees.

2. Tenderize the chicken breasts using a meat mallet, and then cut the chicken into 2-inch pieces.

3. In a medium bowl, combine the egg, water and sugar.

4. In a brown paper bag, combine all the dry ingredients.

5. Time to coat! Dip each piece of chicken generously into the egg wash, and then into the paper bag. Shake the bag to ensure each piece of chicken gets well coated (Only shake 3 – 4 pieces at a time).

Snickers is probably hands down my favorite chocolate bars on this planet. The ratio of caramel, peanuts, chocolate and soft nougat are a combination like none other. I have tried many different options but nothing can satisfy a chocolate craving quite like a Snickers bar.

There are many different recipes around that claim to recreate the colossal mashup of these flavors in a giant size. Trust me when I say I have tried almost all of them. I have made everything from a cheesecake to brownies to poke cakes.

This tart in particular is by far one of the best Snickers treats I have ever had! Perfect for those hot summer nights and junior bakers as there is literally NO BAKING required! Melt up a little butter and chocolate in the microwave and bobs your uncle!

Easy peasy, deliciously sweet and salty all in one perfectly formed chocolate tart! It is every Snickers lovers dream come true. Easy to make and a treat the entire family and your neighborhood guests will love! Try it out this weekend, you won’t be disappointed.

Snickers Ice Cream Brownie Cake

Crush cookies using a food processor to a fine crumb consistency. Add melted butter and combine until the mixture becomes thick.

Add the crust mixture into your tart pan, pressing down firmly on the bottom and sides.

In a separate bowl, combine caramel/dulce de leche and the dry roasted peanuts.

Pour over crust layer and smooth to create an even layer. Set into the fridge to set.

In a microwave safe bowl, add the cream and chocolate and microwave on 30 second intervals to melt chocolate and combine.

Chop up Snickers bar into small, bite size pieces and set aside. Once your chocolate is melted, pour an even layer on top of the caramel layer, creating an even coat.

Margarita Pretzel Bars

Pineapple Pie

Keep scrolling to see how to make this deliciously boozy dessert.

Preheat the oven to 375 degrees.

Start by mixing the crushed pretzels and sugar together in a bowl. Stir in the melted butter.

Add 1 tbsp of the pretzel mixture into the bottom of your mini muffin pan sections. Make sure to press into bottom and slightly up the sides.

Pop that in the oven for about 5 minutes. Remove and let cool.

In a large bowl add the sweetened condensed milk, limeade concentrate, tequila and green food coloring. Mix well.

There is nothing better than summer and sitting around a campfire outside. I love the outdoors and spend a lot of time camping or around the fire pit in my back yard. That smell of burning wood and toasting marshmallows cant be beat.

As much as I would like to put the blame on the kids, I have to admit I love toasting up marshmallows over the open fire and make a good old s’mores sandwich.

S’mores pie is honesty one of the best things I have ever had! It combines all the great things you love in a s’more with far less tedious work and might I say, my hands stay MUCH cleaner. It is a great option for those of you that also don’t have the campfire to cook around as well.

S’mores pie, easy to make and a treat I know my whole family loved! We make it a few times a  year and there is never anything left. We eat it hot out of the oven some days when we want that real s’mores mess and sometimes we let it cool if we want  a little ‘cleaner’ option, still tastes just as great!

S’mores Cheesecake

To make, preheat oven to 350°F and spray a 9″ pie dish with non-stick spray.In a large bowl beat butter and sugar together until combined, then add egg and vanilla and stir them in.

4th of July Red, White and Blue Cheesecake Bars

Every year my house always hosts the big 4th of July festivities. We have everything from a big BBQ set up, to the bouncy castles for the kids to a big Tiki bar for the adults. We definitely like to go all out at our house.

I love to keep everything in theme. We do themed desserts, appetizers, cocktails and mains. Its safe to say I have a decent system by now. I guess you could even say I may tend to go a little overboard but hey, 4th of July is a big celebration down South so why not go all out!

The dessert table I would have to say is definitely my specialty. I have everything from popsicles to mini cookies, cupcakes and bars. All themed of course! The tri-colored cheesecake bars seem to be the consistent talk of the town.

With a super simple recipe, crushed Oreo and regular cream cheese, these bars a hit! Ready in under an hour with little to no mess and most ingredients you will already have at home. Serve up room temperature or chilled, whatever your preference they will not disappoint. Try them out for your 4th of July party this year!

Patriotic Oreo Pops

To make, preheat oven to 325 degrees. Line a 9×13 inch pan with parchment paper. Place your Oreo’s with the filling into the food processor and blend into fine crumbs. Stir in butter and press firmly into the bottom of the lined pan. Bake for 10 minutes and set aside.

Beat the cream cheese and sugar until blended and smooth.

Add sour cream. vanilla and flour, continue to beat until well blended.

Add in the eggs and beat until mixed.

Divide the batter into 3 bowls, adding blue and red to 2 bowls. Mix to blend color.

Spoon the mixture over the cooled Oreo crust in an alternating pattern.

Using a spatula or knife, drag it up and down and across to create a swirl like pattern.

Bake for 45 minutes and allow to cool roughly for 1 hour and refrigerate for 4-6 hours.

Cut into squares or bars adding whip cream and sprinkles if desired.

Unfortunately my birthday falls during the autumn months so I don’t get to take advantage of this delicious Sprinkle Ice Cream Pie, however, my son’s birthday is smack dab in the middle of summer, so bring on the sprinkles!

This delicious vanilla ice cream and rice krispie treat pie is a the perfect dessert to make for any special occasion, especially if that special occasion is taking place during those hot summer days.

Ice cream treats have always been my favorite, and when you can find a recipe to make your own that’s as easy as this one, it’s hard not to give it a try. With only a few ingredients needed, you could have this pie ready in no time at all! Just remember to keep in the freezer until you’re ready to eat it, otherwise you’ll end up with quite the mess.

BBQ Chicken Monkey Bread Is the Perfect Appetizer for Your Next BBQ

I sadly must admit that up until about 2 years ago I had never heard of monkey bread. Yes, a travesty as we all know it. But I am happy to say that I have made up for much of my lost time and recipes.

I have made almost every dessert monkey bread recipe out there. From plain old cinnamon and sugar to Reese Pieces to microwavable monkey bread all of them have been without a doubt the best finger food desserts I have ever had! Nothing beats sweetness added to warm, soft dough.

After all the desert making, I decided to broaden my horizon even further and try a little dinner time/appetizer style recipe. The more I looked into it, the more recipes I found that weren’t just for dessert!

BBQ chicken monkey bread was by far one of the best and easiest to make apps I have ever had! I made it for a BBQ I had last weekend and people went nuts for it! Pull apart bread with shredded chicken, cheese, bold BBQ sauce and fresh parsley. Perfect flavors with warm dough balls makes for a perfect pull apart appetizer and great for sharing.

Bacon, Egg and Cheese Monkey Bread

Caramel Monkey Bread

To make, Preheat the oven to 375°F. Cut the pizza dough tubes in half lengthwise, then cut crosswise into 2-inch pieces, and roll into balls.

Place the pizza dough balls in a large bowl, then add the olive oil, salt, pepper, and garlic powder. Toss gently with your hands to coat.

Add the mozzarella and onion and toss gently with your hands until evenly distributed.

In a medium bowl, combine the chicken and ¼ cup of barbecue sauce. Add to the bowl with the dough balls and toss gently with your hands to mix.

Fill the bottom of a 9-inch cake pan with dough balls, make sure not to pack them too tightly.

Spray the outside of a small oven-safe bowl with nonstick spray and place on top of the dough balls in the middle of the pan. Fill the area around the bowl with the remaining dough balls.

Bake for 25 minutes, or until the tops of the dough balls begin to turn light brown.

Remove from the oven. Use tongs to remove the small bowl and bake for another 10 minutes, or until the tops of the dough balls are golden brown and bubbling.

Fill the bowl indent with the remaining cup of barbecue sauce and sprinkle with cilantro.

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 3 cups shredded mozzarella cheese
  • 1 cup red onion, chopped
  • 2 cups chicken, shredded and cooked
  • 1 ¼ cups BBQ sauce, divided
  • nonstick cooking spray
  • fresh parsley for serving
  1. Preheat the oven to 375°F (190°C).
  2. Cut the pizza dough tubes in half lengthwise, then cut crosswise into 2-inch (5 cm) pieces, and roll into balls.
  3. Place the pizza dough balls in a large bowl, then add the olive oil, salt, pepper, and garlic powder. Toss gently with your hands to coat.

  7. Bake for 25 minutes, or until the tops of the dough balls begin to turn light brown.
  8. Remove from the oven. Use tongs to remove the small bowl and bake for another 10 minutes, or until the tops of the dough balls are golden brown and bubbling.
  9. Fill the bowl indent with the remaining cup of barbecue sauce and sprinkle with cilantro.

Cotton Candy Grapes Are Back, So Where Can You Buy Them?

I guess I’m just behind the times, but today I heard of something for the first time ever: cotton candy grapes. At first I thought it was just grape flavored cotton candy, but it’s actually the other way around!

Cotton candy grapes are naturally modified green grapes that taste like everyone’e favorite sugary carnival snack. Through an entirely natural process, the fruit becomes more like a candy than anything else!

Since the process of making cotton candy grapes is pretty extensive and time consuming, they only come around once a year…until this year, that is!

There are two major producers of these sweet fruits, and their in-season dates happen to off-set each other.

Arizona’s Divine Flavor and the California-based company Grapery have both released their expected release dates for this year, and it means you can enjoy cotton candy grapes for five whole months this year. Talk about timing!

Divine Flavor has already released their grapes, which were available starting in May.

They sell their grapes in 2-, 3-, and 16-pound packages, so you can decide just how much you want to enjoy the cotton candy flavor!

As for Grapery, their cotton candy grapes will be available starting in August through September. According to them, the flavor is better once the grapes have been chilled.

1. Preheat oven to 425 degrees, and spray the cavities of a muffin tray with non-stick spray.

KFC’s New Pickle-Fried Chicken Will Leave You Dill-irious

Three things in life are guaranteed: death, taxes, and KFC making finger-lickin’ good chicken.

The iconic restaurant chain is known for its secret seasoning mix, which has 11 herbs and spices. But for the past little while, KFC has been trying to branch out when it comes to the products they offer.

For example, they came out with KFC gravy cocktails which were…definitely an experiment.

Each of the three cocktails contained real KFC gravy, though they probably shouldn’t have.

Then there was the KFC bath bomb which smells like fried chicken. I don’t know about you, but I’ve never left a warm bath wishing that I smelled more like fried chicken.

Just a few weeks ago, the famous chicken creators announced they were coming out with vegetarian fried chicken in an effort to keep up with the “latest changes in lifestyle and dining habits of customers.” This idea is still in the works, but it really doesn’t sound like a horrible idea.

Neither does KFC’s most recent introduction, which is their new Pickle-Fried Chicken.

“People are crazy about pickles, and pickle-flavored products are becoming today’s trendiest menu item,” said Andrea Zahumensky, chief marketing officer for KFC U.S., in a release. “Pickles and fried chicken are a match made in heaven, with tastemakers everywhere pairing these flavors. Our guests have been clamoring for more pickles – especially since we launched the Crispy Colonel Sandwich™ — so we’re giving them what they want by coating our Extra Crispy™ Chicken with a mouthwatering pickle sauce that delivers a craveable punch of pickle in every bite!”

The pickle option can be applied to the Crispy Colonel Sandwich, Extra Crispy Tenders, Chicken Littles, or Extra Crispy chicken selections.

KFC

According to KFC, the classic chicken is “coated in pickle sauce” which “features onion and garlic notes, buttermilk and a white and black pepper blend — a combination that is sure to satisfy even the ultimate foodie’s palate.”

Emma Lord, a writer at Bustle, got to try the pickle-fried chicken and her review says it all.

Kate Taylor from Business Insider also got to try the new recipe.

Impressively, the pickle flavor is bold and vinegar-tinged, instead of overwhelming the taste tester with sourness. KFC’s extra-crispy chicken proves to be a worthy base, with its craggy crunch pairing well with the pickle-flavored sauce and pickle toppings.

Pickle Fried Chicken isn’t perfect. The pickle-forward dish is extremely salty, to the detriment of the chicken. And, if left sitting for too long, the pickle sauce can soften some of the extra-crispy crunch.

Pickle-fried chicken will be available starting on June 25 for a limited time while quantities last.

Cheeseburger Quesadillas Taste Just Like a Big Mac

Quesadillas are probably one of the best meals I have ever had. They are quick and easy to make and you can do so much variation with them. You can make 5 different kinds in one sitting with little to no effort involved.  

My kids love them because they all have, shall we say, such unique tastes and we can add as much or as little of things in each one as we like. They make a great meal with no dishes or a mess. Cheese makes everything no matter what, taste amazing!

The kids are all about their burgers so we figured why not give that a quesadilla try! It proved to be way less of a mess and with the sauce tasted JUST like a Big Mac! With little to no cooking time, fresh pickles, ground beef and cheese, this 3 ingredient Quesadilla was one of the best we have made yet!

BBQ Chicken Food Truck Tostadas

One Pan Meatloaf Dinner

To make, in a small bowl, combine mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside.

In a large skillet over medium-high heat, cook beef until browned and cooked through, about 6 to 8 minutes. Drain well on paper towels if desired.

Wipe out skillet, coat with nonstick spray, and heat over medium heat. Working with 1 tortilla at a time, add to skillet. Top half the quesadilla with 1/2 cup cheese and 1/4 of the cooked beef.

Top with pickle slices, if using, and another 1/2 cup cheese. Fold in half and cook until cheese is melted and the tortilla is golden brown on one side, about 2 minutes.

Flip quesadilla and continue cooking until all the cheese is melted and the second side is golden brown. Transfer to a plate and cover to keep warm. Repeat with remaining tortillas, beef, and cheese.

Cut each tortilla in quarters and divide among 4 plates.  Drizzle the quesadillas with sauce. Serve more sauce on the side if desired.

For the Special Sauce:

  • 1/3 cup mayonnaise
  • 1/3 cup ketchup
  • 2 tablespoons pickle juice
  • 1 tablespoons yellow mustard
  • 1 teaspoon Worcestershire sauce

For the Quesadillas:

  • 4 (8-inch) flour tortillas
  • 4 cups shredded cheddar cheese
  • 24 dill pickle chips (optional)
  • Salt and freshly ground black pepper
