I’m telling you, during the busy week, it doesn’t take much to make me try to get out of making dinner. I mean, who wants to work a busy day and then come home and slave over a meal?!

When I discovered this recipe for Sheet Pan Bruschetta Chicken, I realized that cooking a delicious meal is possible anytime! We used this gorgeous Zwilling Chestnut Cutting Board to get all the chopping done. Seriously, it doesn’t get much easier than this healthy chicken dish – and the flavor? Wow! You’ll love this.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Kosher salt and freshly ground black pepper, to taste
  • 16 ounces baby red potatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/3 cup freshly grated Parmesan
  • 4 ounces mozzarella cheese, cut into 4 slices

For the bruschetta

  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1/4 cup basil leaves, chiffonade
  • Kosher salt and freshly ground black pepper, to taste

Directions:

Preheat oven to 400 degrees. Lightly oil a baking sheet or coat with nonstick spray.

To make the bruschetta, combine tomatoes, olive oil, balsamic vinegar, garlic and basil in a medium bowl; season with salt and pepper, to taste. Set aside.

Season chicken with salt and pepper, to taste. Place chicken in a single layer onto one side of the prepared baking sheet. Top chicken with mozzarella slices.

Add olive oil, garlic, thyme, oregano, basil and Parmesan to potatoes and season with salt and pepper, to taste. Gently toss to combine. Add potatoes to other side of baking sheet.

Finally, top chicken slices with bruschetta.

Place into oven and bake until the chicken is cooked through and the potatoes are golden brown and crisp, about 20-25 minutes.

Serve immediately.

Directions:

Add the cream cheese, honey, yogurt and vanilla into a food processor (or liquidizer).

Process until creamy, about 2-3 minutes. Scrape down the side of the bowl to make sure there are no lumps left.

Transfer it to an airtight freezable container and stir in the sprinkles with a spatula. Freeze for a minimum 6 hours but preferably overnight. Store it in the freezer for up to 1 month.

Ingredients:

  • 12 thin corn tortillas yellow or white corn
  • 1/2 lime
  • Cilantro, finely chopped
  • Coarse sea salt
  • Olive oil spray or olive oil

Directions:

Preheat oven to 350 degrees. Set out two to four large baking sheets and spray with olive oil cooking spray (or grease with olive oil).

Make two stacks of tortillas and cut each stack into 6 wedges.

Spread tortilla wedges in a single layer on baking sheets, lightly spray with olive oil cooking spray (or brush with olive oil), sprinkle juice of 1/4 lime and top with coarse sea salt.

Bake until golden brown, about 10 to 15 minutes, rotating baking sheets halfway through baking time.

Remove from oven and sprinkle with remaining juice of 1/4 lime and more sea salt if desired. Serve immediately and enjoy!

Directions:

Add your chicken parts, onion, ginger, coriander seeds, cloves, star anise, sugar, fish sauce and cilantro stems to the slow cooker.

Fill the slow cooker to the max line with water. Cook on high for 4-6 hours.

When it’s done, strain the water through cheesecloth.

Poach the other chicken in water until they are cooked.

Remove the chicken and then add your rice noodles into the same water and cook for about a minute or so.

Add your rice noodles to a bowl with a few pieces of chicken. Add some of your chicken broth to the bowl and enjoy!

  • 2 portobellos

Directions:

Hard herbs like rosemary, sage, thyme or oregano can all be frozen to use at a later date. It is very simple to do!

Start by cutting up your herb, making sure they are firm and very fresh.

You can chop them up finely or leave them in larger sprigs or leaves, which ever you prefer.

Then you are going to want to use an ice cube tray and pack each cube about 2/3 full with one herb.

Then you are going to pour extra virgin olive oil to fill up the tray.

If you are making a variety of different herbs don’t forget to label the tray. Then cover it in plastic wrap and freeze.

Once frozen, remove them from the ice cube tray and put each herb in its own labelled freezer bag.

Toss them back into the freezer and then you’ll have fresh herbs anytime you need them!

We spend so much time worrying about how the food we eat will affect our bodies, but we often overlook the effect it has on our minds.

You might not even realize that your dinner can have a big impact on your brain and its health. We’ve all heard of “brain food,” but not many of us could point it out in the grocery store.

Luckily, scientists have actually identified the foods that help your brain stay in shape, and there’s an entire diet built around preventing mind diseases like dementia and Alzheimer’s.

The MIND diet is actually a combination of two other diets, the Mediterranean diet – which features foods common to the region, like red wine, fish and olives – and the heart-healthy DASH diet, which we’ve discussed before.

First introduced in 2015, the MIND diet already has lots of evidence to back it up. In a study of nearly 1,000 seniors, those who followed the diet had their risk of Alzheimer’s cut by 53{49382ccf8aa3307257579caf6f867159d328eca730a0976815a1bacefc5bc6ee}.

The key to the diet’s success is it protects your brain from oxidation, the damage that eventually adds up to a serious condition.

Liz Applegate, a nutritionist from UC Davis, explains in an interview that oxidation is “like a fire getting started.”

“These (good) foods act like little tiny fire extinguishers,” she says, “that help put out those fires that otherwise would cause damage leading to loss of brain function.”

The MIND diet recommends eating lean meat, as well as vegetables and berries (which are full of antioxidants). Meanwhile, you should avoid red meat and fried food, which can cause oxidation.

Applegate says the causes of Alzheimer’s disease are so similar to diabetes that it’s sometimes called “Type 3” diabetes. That means that it’s also helpful to cut sugar out of your diet, maybe by replacing it with fruit.

“Pick one thing to work on,” she recommends. “I’m going to eat berries twice a week. Make a berry smoothie on Tuesday and Friday or put berries on your oatmeal. Just chip away at eating more healthfully.”

  • 3/4 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Directions:

In a shallow dish, add all the spices together and whisk until it is blended into a yummy seasoning.

Roll the trout pieces into the spice mix, making sure each side is covered.

Dip the coated trout into the melted butter.

Place your trout into a hot skillet. Cook for about 2-5 minutes per side until blackened.

Serve with some veggies, and if you want to you can use some of the leftover butter to dip in!
