DIY Garlic Dill Pickles Are Perfectly Pickled

Oh, dill pickles – you either hate ’em or you love ’em, but you can’t deny that the transformation of these is a thing of beauty. This recipe for Refrigerator Garlic Dill Pickles will make you feel great knowing that you pickled these from scratch.

And the method is so easy! All you need are some fresh pickling cukes, garlic, dill and spices, and you’ll have your own homemade crunchy pickles. This recipe makes tons of pickles, so these are even a great gift idea. Attach some decorations to the mason jars, and your holiday shopping list just got much shorter!

  • 2 quarts of water
  • 1 cup white or cider vinegar
  • ½ cup pickling salt
  • About 3 to 4 pounds of cucumbers – small pickling cukes are best
  • 8 large heads of dill, or more if they are smaller
  • 8 medium garlic cloves, peeled and sliced
  • 1 tablespoon mustard seed
  • 4 pinches red pepper flakes
  • About 20 black peppercorns

This will make about 4 quarts of pickles, so you need 4 1 quart jars with lids, or more if they are smaller. Canning jars aren’t necessary, but they do need a lid. Wash in hot soapy water and rinse well (or run through the dishwasher).

Measure the water, vinegar and salt into a 3 quart sauce pan and set over high heat – you want the salt to dissolve and the mixture to come to a full boil.

Meanwhile, make sure your cucumbers are good and clean. Cut them however you like – the smaller the pieces, the more that will fit in a jar. Spears are pretty to serve, though if you end up with a lot of odd sized cucumbers, chunks may work better.

In the bottom of each jar, place 1 large head of dill, or several smaller ones. You can also put in some of the fronds and stems. Then put 1 garlic clove in the bottom.

Fill each jar with cucumbers – for spears, it might be easier to lay the jar on its side. You can really cram them in there tightly, but leave a good inch of headspace at the top, so that the brine will be able to cover the pickles.

Top the cucumbers in the jars with another clove of garlic, as well as another large head of dill. You can just leave it at that, or for a little more complexity of flavor, add a scant teaspoon of mustard seed, a pinch of red pepper flake and 5 peppercorns to each jar.

Carefully fill each jar with the boiling water/vinegar/salt mixture, making sure to get the cucumbers completely covered.

Screw on the lids.

Leave the jars out in the counter for 2 or 3 days, and then store in the refrigerator for at least two weeks before opening them.

They will keep well for several months at least, so long as you keep them refrigerated. Naturally, if anything looks or smells funky, discard them, but honestly, that happens very rarely.

Preheat oven to 425 degrees.

  • 2 pounds lean ground beef
  • 2 eggs
  • 1 cup saltine crackers, crushed
  • 1/3 cup dry mined onion
  • 1/3 cup milk
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/3 teaspoon pepper

Honey Buffalo Sauce:

  • 1/4 cup Frank’s Red Hot Sauce Original
  • 1/4 cup + 1 tbsp honey
  • 1/4 cup apricot preserves
  • 1/4 cup brown sugar
  • 2 tablespoons reduced sodium soy sauce
  • 1 1/2 tablespoons cornstarch

Directions:

Preheat oven to 450 degrees and line a baking sheet with foil.

In a large bowl, whisk the eggs.

Line the slow cooker with some of your meatballs and then poor the sauce on top. Add the rest of the meatballs and then stir so they are all coated in the sauce. Cover and cook on low heat for 2 hours. Stir about half way through.

Next, take an empty milk or juice carton (wash and dry well first!), and cut off one of the corners with some scissors.

Pizza is one of my favorite foods – you just can’t go wrong with soft dough, savory sauce, and of course, loads of cheese! This White Pizza Monkey Bread hits all of those bases, and is a little different with Alfredo sauce used instead of your usual tomato.

You’ll love keeping this recipe in your back pocket for anytime you have to feed a crowd of people. Everyone will love breaking off chunks of this scrumptious pull apart white pizza bread!

Ingredients:

  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 1/2 cups finely shredded Italian cheese blend
  • 1 tube Pillsbury refrigerated thin pizza crust
  • 2 cups (1-inch round) mozzarella balls (about 24)
  • 2 cups Alfredo sauce
  • Basil, freshly chopped (for garnish)
  • Nonstick baking spray

Directions:

Preheat oven to 350 degrees. Spray a bundt cake pan with nonstick baking spray. Set aside.

In a large bowl, stir together garlic powder, Italian seasoning and shredded cheese. Set aside.

Unroll pizza dough and cut into 1 1/2-inch squares with a sharp knife. Wrap each square of dough around a mozzarella ball and dip into 1 cup of Alfredo sauce. Dip into prepared shredded cheese mix.

Place inside bundt pan, creating a uniform layer all the way around the pan.

Bake for 30-35 minutes until golden brown. Allow to cool for 5 minutes before inverting the Bundt pan onto a serving platter. Garnish with basil. Serve with remaining 1 cup of alfredo sauce (warmed).

You Won’t Want to Share This Delicious Bacon Cream Cheese Bread Dip!

Anytime I have a party or get together, I have to make a dip. Even if it’s just to keep appetites satisfied until dinnertime, there is such a variety when it comes to dip choices.

This Bacon Cream Cheese Bread Dip is a surefire winner. To get ours to the perfect warmth for serving, we used this beautiful Staub Gratin Dish – it’s the perfect size for a dip or dinner for two. Between the creamy texture, salty bacon, and cheese galore, you and your guests will love dipping in some toasted baguette slices!

Ingredients:

  • 8 slices of bacon, cooked crisp and crumbled
  • 8 ounces cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 2 teaspoon Dijon mustard
  • 1 1/2 cups shredded Swiss cheese
  • 3 green onions diced
  • 1/2 teaspoon horseradish sauce

Directions:

Preheat oven to 400 degrees.

Combine all ingredients and mix well using a rubber spatula.

Transfer to a shallow baking dish (about 9×9) and bake for 15 minutes, or until golden and bubbly on top.

For the bread, we used baguette slices – cut 1/2 inch slices and brush one side of each slice with a small amount of olive oil, then broil in the oven for just a minute or two on a baking sheet until toasted.

Dip and enjoy!

Candied Walnuts Are So Yummy, You’ll Want Them on Everything!

Candied Walnuts are just too good. Use them to top your favorite desserts like strudels or ice cream sundaes, and you’re in for a real treat.

It’s so easy to make these and have them on hand to add some pizzazz to a dish, or really just use them for plain old snacking. Make sure you watch the sugars as they cook – you don’t want burnt candied walnuts! Enjoy!

Ingredients:

  • 1 cup of halved, de-shelled walnuts
  • 1 tablespoon of butter
  • ¼ cup of white sugar
  • 1 teaspoon of water

Directions:

Prep a baking sheet with wax paper and place it next to your stove with some tongs or a spatula handy.

In a non-stick skillet, add your sugar, butter, and walnuts.

Over medium heat stir constantly until you ingredients begin to melt.

Once you start seeing the caramel brown, add in your teaspoon of water.

Nuts will be deep golden brown, and sticky – immediately transfer to the baking sheet and separate them in one layer to keep them from sticking together.

Allow nuts to cool for 10 minutes, and store in an airtight container.

Ingredients:

  • 1 teaspoon olive oil
  • 2 fresh eggs
  • 2 ounces wild smoked salmon (roughly 2 thin slices)
  • 1/2 cup arugula
  • 1/4 avocado, diced
  • Squeeze of fresh lemon
  • Pinch of freshly ground pepper

Directions:

Heat your olive oil over medium heat and swirl around in a nonstick pan. Slowly put 2 (unscrambled) eggs into the pan and cook until done, about 6 minutes.

While your eggs are cooking, assemble your arugula, avocado, and smoked salmon in a shallow bowl. Squeeze lemon juice over everything, and sprinkle with pepper.

Once your eggs are fully cooked, slide them into your bowl, and enjoy immediately.
